CHICKEN COCONUT-RED-CURRY CASSEROLE

Ingredients:
1 Jar La Maison Signature Sauces Coconut Red Curry
2 Large boneless, skinless chicken breasts
2 Cups Broccoli florets (if using frozen, thaw completely)
1 Pkg Brown rice
Salt and Pepper to taste
Cooking spray
How to Prepare:
Cook chicken and slice in thin strips
Cook broccoli florets until just fork tender (do not overcook)
Lightly spray with cooking spray a 9x9 casserole
Place broccoli florets on bottom and chicken slices on top
Cover with Coconut Red Curry Sauce
Cook in oven at 350 degrees for 25-30 minutes until heated through.
While casserole is cooking, prepare rice according to directions.
Serve rice on heated plates, topped with serving of casserole.
