Ingredients:
2 Jars La Maison Signature Sauces Coconut Red-Curry Sauce
2 Cans pumpkin or squash puree (unseasoned)
2 Cups Chicken or vegetable stock
1 Cup White wine (optional)
2 Large sweet onions, diced
1 Tbl Butter
1 Tbl Olive oil
1 Bay Leaf
Salt and Pepper to taste
1 Lime, zested for garnish
How to Prepare:
Sauté onions in butter and olive oil until tender. (Do not brown)
Add white wine and reduce for approximately 10-15 min on medium heat.
Add Coconut-Red-Curry Sauce, Pumpkin/squash puree, and chicken/vegetable stock.
Add bay leaf, salt and pepper to taste and let simmer on low for approximately 30 minutes, to allow flavors to blend.
Serve soup with lime zest on top for garnish.
