Rack of Lamb w/ Sherried Mushrooms

Ingredients:
1 Frenched (cut so the rib bones are exposed) lamb rib rack with 7 to 8 ribs
Kosher Salt and Cracked Peppercorns to taste
2 Tbl olive oil
1 jar La Maison Signature Sauces Sherried Mushrooms Sauce
How to Prepare:
Preheat oven to 400º F.
Remove rack of lamb from refrigerator 1-2 hours before cooking to bring to room temperature.
Score the fat by making sharp shallow cuts through the fat, and rub the rack with olive oil. Salt and pepper well.
Place lamb on rack in pan and place pan in the center of preheated oven.
Roast at 400º F. for 7 minutes, then lower the heat to 300º F. Cook for 7-15 minutes longer (depending on the size of the lamb rack) until meat registers to 125º; for rare or 135º; for medium rare.
Remove from oven, cover with foil and let stand 5 – 10 minutes.
In the meantime, place La Maison Signature Sauces Sherried Mushroom Sauce in pan over medium/low heat, stirring occasionally, until sauce begins to simmer.
Cut lamb chops away from the rack by slicing between the bones. Serve 2-3 chops, fanned out on plate and cover with 2-3oz of
sauce.Serve with asparagus and wild rice or garlic mashed potatoes.
