Braised Tofu and Vegetable w/ la maison signature sauces

Ingredients:

 

12 oz.  Medium egg noodles

2 TBS  Olive oil, divided

1 lb  Firm Tofu, drained and cubed

2 1/2  Cups thinly sliced fennel (approx 1 large bulb)

1  Medium zucchini, quartered and thinly sliced

1  Medium summer squash, quartered and thinly sliced

1  lb Baby Bella mushrooms, sliced

Salt and pepper to taste

1-2 jar La Maison Signature Pesto Cream Sauce or La Maison Signature Pomegranate w/ Saffron Sauce


How to Prepare:

  • Cook noodles according to package directions.

  • While noodles are cooking, heat 1 TBL oil in large nonstick skillet over med/high heat.  Add tofu, and cook 10 min. or until golden brown, stirring  frequently.  

  • Remove tofu with a slotted spoon.  Heat 1 TBL oil in pan and add the fennel, zucchini, summer squash, mushrooms and salt & pepper, and cook for approx. 4 minutes or until tender, stirring frequently.  Stir in the tofu, reduce heat and simmer approx. 5 min.

  • Remove cap from La Maison Signature Sauce of your choice and warm 30-40 seconds in microwave.

  • Place noodles on hot platter (or 6 individual heated plates) top with tofu and vegetables mixture.

  • Cover with heated sauce and serve immediately.
