CHICKEN COCONUT-RED-CURRY CASSEROLE

Ingredients:

 

1  Jar La Maison Signature Sauces Coconut Red Curry

2  Large boneless, skinless chicken breasts

2 Cups  Broccoli florets (if using frozen, thaw completely)

1 Pkg  Brown rice

Salt and Pepper to taste

Cooking spray


How to Prepare:

  • Cook chicken and slice in thin strips

  • Cook broccoli florets until just fork tender (do not overcook)

  • Lightly spray with cooking spray a 9x9 casserole

  • Place broccoli florets on bottom and chicken slices on top

  • Cover with Coconut Red Curry Sauce

  • Cook in oven at 350 degrees for 25-30 minutes until heated through.

  • While casserole is cooking, prepare rice according to directions.

  • Serve rice on heated plates, topped with serving of casserole.
