Chipotle Chicken Quesadilla w/ Caramelized Onions & Peppers

Ingredients:

 

1 package of flat bread

1 lb. chicken tenders, sliced in pieces

1 large sweet onion, sliced

1 medium red pepper, sliced

1 medium green pepper, sliced

5 Tbl olive oil, divided

1 Tbl sugar

1 jar  La Maison Signature Chipotle Cream Sauce

8 oz pepper jack or cheddar cheese, shredded

1 pint sour cream

 

 

 


How to Prepare:

  • Preheat oven to 350ºF.

  • In a 12" skillet, place 1 Tbl olive oil and lightly toast 4 pieces of the flat bread.  Set aside.

  • In same skillet on medium-high heat, place 2 Tbl olive oil, onions and peppers and stir to coat with the oil.  Sauté onions and peppers, covered until soft.  Add 1 Tbl sugar, and stir uncovered, continuing to sauté; until onions and peppers are caramelized.  Set aside.

  • Add remaining 2 Tbl olive oil to skillet with chicken tender pieces.  Stir until chicken is cooked through, but meat is still moist.

  • Take 2 cookie sheets covered with foil and place one piece of toasted flat bread on each sheet.  Spread liberally with Chipotle Cream Sauce.  

  • Add cooked chicken pieces and onions and peppers.  Cover each with 4 oz shredded cheese.  

  • Place remaining flat bread on top and bake in 350ºF. just until cheese melts.  Cut in wedges using a pizza cutter and serve with sour cream.
