Chipotle SCALLOPS

Ingredients:

 

12-16  large sea scallops, rinsed well and patted dry with a paper towel

Kosher salt to taste

1 Tbl olive oil

1 Tbl butter

Angel hair pasta (optional)

.9-oz Jar  La Maison Signature Sauces Chipotle Cream

 

 

 


How to Prepare:

  • Remove "foot" from each of the prepared scallops.
  • Preheat non-stick skillet to medium/high heat and add butter and olive oil. The oil/butter mixture needs to be very hot before adding the scallops. Keep pan moving so that butter does not burn.
  • Place scallops in hot pan and do not move them.  (If you move scallops around pan you will prevent them from browning.)
  • Flip the scallops after about 2 minutes and continue to cook approximately 1 minute more.  The scallops should be removed from the pan and served while their centers are still slightly translucent (you can check this by viewing them from the side).  They will continue to cook after removing them from the pan, so be careful not to overcook.
  • Place 2 oz - 3 oz of heated La Maison Signature Sauces Chipotle Cream on preheated plates.  Arrange scallops on top of sauce and serve with a large tossed salad and crusty bread.
  • (Optional)  This may be served over angel hair pasta.
