COCONUT-RED-CURRY
PUMPKIN SOUP

Ingredients:

 

2   Jars La Maison Signature Sauces Coconut Red-Curry Sauce

2  Cans pumpkin or squash puree (unseasoned)

2 Cups   Chicken or vegetable stock

1 Cup  White wine (optional)

2  Large sweet onions, diced

1 Tbl  Butter

1 Tbl  Olive oil

1  Bay Leaf

Salt and Pepper to taste

1  Lime, zested for garnish

 


How to Prepare:

  • Sauté onions in butter and olive oil until tender.  (Do not brown)

  • Add white wine and reduce for approximately 10-15 min on medium heat.

  • Add Coconut-Red-Curry Sauce, Pumpkin/squash puree, and chicken/vegetable stock.

  • Add bay leaf, salt and pepper to taste and let simmer on low for approximately 30 minutes, to allow flavors to blend.

  • Serve soup with lime zest on top for garnish.
