COCONUT RED CURRY stir-fry

Ingredients:

 

1  Jar La Maison Signature Sauces Coconut Red Curry Sauce

2 tsp  Corn Starch

2 tsp  Soy Sauce

1/8 tsp  Red Pepper Flakes

3  Green onions, diagonally sliced

2  Cloves garlic, minced

2 Cups  Broccoli florets

2/3 C  Carrots, thinly sliced on the diagonal

1 ½ tsp  Olive oil

6 oz  Skinless, boneless chicken breast, cut into bite-size pieces

1 pkg  White rice, cooked according to package directions

Cooking spray


How to Prepare:

  • Heat first 4 ingredients in sauce pan and whisk until smooth, keep warm and set aside.

  • Spray nonstick wok or large, deep nonstick skillet with cooking spray.  Heat over medium-high heat.

  • Add onions and garlic, stir-fry 1 minute.  Remove from wok.

  • Add broccoli and carrot to wok; stir-fry 3-4 minutes or until crisp tender.  Remove from wok.

  • Add oil to hot wok.  Add chicken and stir-fry 2-3 minutes or until no longer pink. 

  • Stir in sauce mixture, return all vegetables to wok and heat through.

  • Serve over rice.
