Rack of Lamb w/ Sherried Mushrooms

Ingredients:

 

1 Frenched (cut so the rib bones are exposed)  lamb rib rack with 7 to 8 ribs

Kosher Salt and Cracked Peppercorns to taste

2 Tbl  olive oil

1 jar  La Maison Signature Sauces Sherried Mushrooms Sauce


How to Prepare:

  • Preheat oven to 400º F.

  • Remove rack of lamb from refrigerator 1-2 hours before cooking to bring to room temperature.

  • Score the fat by making sharp shallow cuts through the fat, and rub the rack with olive oil.  Salt and pepper well.

  • Place lamb on rack in pan and place pan in the center of preheated oven.

  • Roast at 400º F. for 7 minutes, then lower the heat to 300º F.  Cook for 7-15 minutes longer (depending on the size of the lamb rack)  until meat registers to 125º; for rare or 135º; for medium rare.

  • Remove from oven, cover with foil and let stand 5 – 10 minutes.

  • In the meantime, place La Maison Signature Sauces Sherried Mushroom Sauce in pan over medium/low heat, stirring occasionally, until sauce begins to simmer.

  • Cut lamb chops away from the rack by slicing between the bones.  Serve 2-3 chops, fanned out on plate and cover with 2-3oz of 
       sauce.

  • Serve with asparagus and wild rice or garlic mashed potatoes.
