Slow Roasted Parsnips in Pomegranate w/ Saffron

Ingredients:

 

6-8     Parsnips, peeled, trimmed and quartered.  (Try to choose even sized parsnips)

1    Lemon, zest only

2 TBL    Olive Oil + enough to baste foil-lined cookie sheet

1    Clove garlic, minced

1 jar  La Maison Signature Pomegranate w/ Saffron Sauce

 


How to Prepare:

  • Place parsnips, olive oil and garlic in zip lock bag and coat parsnips well w/ garlic & oil.

  • Arrange parsnips on cookie sheet and place in preheated 400ºF oven.

  • Turn parsnips every 15 minutes to roast evenly on all sides.  Cook until fork  tender approx. 1 hour.

  • Place parsnips in serving dish, top with heated Pomegranate w/Saffron Sauce and lemon zest.

Bar-B-Q Directions:

  • Substitute Oil and garlic for Bar-B-Q- Sauce and baste every 15 minutes until parsnips are fork tender.  The parsnips will have a caramelized look to them.
